Title:  酸菜鱼 - Fish with Chinese Sauerkraut

【原料】
草鱼600克,泡酸菜100克 泡红辣椒25克,泡仔姜、葱花各15克,花椒3克,蒜5克,精盐4克,料酒10克 肉汤500克,熟菜油500克。

【制作过程】
将鱼两面各切3分,酸菜搌干水分,切成细丝,泡红辣椒剁碎,泡姜切成粒; 炒锅置中火上,下熟菜油烧至六成热,放入鱼炸呈黄色时捞出; 锅内留油,放入泡红辣椒、姜、葱花,再掺入肉汤,将鱼放入汤内。汤沸后移至小火上,放入泡酸菜,烧约10分钟,盛入盘。锅内加入醋。
【特点】
四川家常菜。以鲜草鱼为主料,配以四川泡菜煮制而成。此菜虽为四川民间家常菜,但流传甚广。成菜肉质细嫩.
